Shrimp and Scallops Stir Fry


The Ongoing Struggle of Deciding What's for Dinner


Last night I think I possibly made THE best dinner of my life. I don't say those words lightly either. The hilarious part is, I totally threw it together because these days it seems so hard to come up with ideas (am I right, or am I right?!) When Todd brought home shrimp and scallops when he did the last shop, I really thought to myself, well this is going to be awesome!


I'm not even sure if this is a helpful recipe because I didn't do a lot of measuring. Maybe it will inspire you to throw something similar together and realize you can make a healthy dinner by winging it too!


Here's (roughly) what I used:

1 head of broccoli

2 red peppers

1 clove of minced garlic

1 small chunk of ginger finely grated

1/4 cup of raspberry orange juice (it's all we had!)

1 tbsp honey

2 tbsp soy sauce (or more if you like)

1 pkg shrimp

1 pky scallops

1/4 crushed red pepper flakes

Some amount of hoisin sauce

(Sorry the details are sketchy here!)


I put all of the chopped vegetables into the frying pan with some avocado oil and let them soften. Then I added the shrimp, scallops and other ingredients. Once everything was cooked through and seafood was opaque I served it over rice.


Seriously, I'll be thinking of this meal for a long, long time. So satisfying and tasty. Hopefully one day I can recreate it!
